There may be an optimal number in Rod Johnstone's design brief or calculated in a velocity prediction program somewhere. If so you could use a Lev-O-Gage® to track it.

A bit of induced heel from the crew weight to leeward in light air will help fill the sails and reduce wetted surface. Once you are up to speed with the Genoa, keep the boat flat to get the most out of the stubby keel and point higher. As the boat becomes overpowered, control the heel angle in the usual way by dropping the traveler, adding backstay, etc.

Heeling causes the boat to turn into the wind, thus weather helm. Assuming your sails are trimmed properly manage the heel angle to control helm pressure.

Never thought about it before but Vic's comment about keeping the weather deck level is probably exactly what what Johnstone had in mind.
