Mark, I'm not sure if you'll get a lot more information from
J/Boats. They built the J/30s a long time ago and a lot of both their records and the molds were lost in a warehouse fire. My understanding is that there wasn't a lot changed between the old and new models, except the cockpit and the galley/berth arrangement. The cockpit was altered to incorporate the coamings and the different bridgedeck. As you mentioned, down below they changed removed one berth and re-arranged the galley, adding a full oven rather than just a two-burner cooktop. The changeover of cockpit and galley wasn't done at one time. I know some boats have a "hybrid" configuration, with one style of cockpit and the other style of galley.
