That seems to be my situation exactly. I finished up most of the inside work re-coring tonight and will be doing a lot of re-coring and glassing behind the keel from the outside just like your example. I haven't broken into the starboard side yet but I expect to find something similar. I used some marine ply I had handy to re-core the space (not the fancy balsa replacement endgrain stuff but that's how it's done in Maine) and the layup is setting up now.

I have a space heater keeping the cabin warm-ish, it's still hitting mid thirties at night around here. Next angle of attack is around and behind the keel and from the outside.

I'm thinking of drilling holes to distinguish where to begin on the outside?
